My dear Mama celebrated her birthday a week ago so we have arranged a swimming party for her last weekend. Each of the family brought their own share for potluck. I chose to bring sinigang na gabi, stuffed bangus and other food items to grill, melon fruit and Chicken Kebab. It was my first time to prepare the chicken kebab and found the recipe a sure winner! even the kids will love it. So today, I am elated to share the recipe with you. INGREDIENTS
Marinade:
Garlic
Lemon
Salt
Pepper
Chicken Meat (Cut into cubes)
Red Bell Pepper
Green Bell Pepper
Onion (White & Red)
Grape Tomatoes
PROCEDURES
First: Prepare Lemon Garlic Marinade for Chicken
Place chicken cubes (breast part of chicken) in a food container.
Mix garlic, lemon juice, lemon zest, pinch of salt and pepper and evenly pour mix over chicken.
Marinate for about an hour or more (if you are not in a hurry, you can also marinate it overnight)
Next:
Soak bamboo skewer in a water (cold) for about 20 to 30 minutes. Set aside.
Then:
Dice veggies such green bell pepper, red bell pepper and onions. Preferably the size should be at least about 1 inches in equal sides.
Finally:
Bring out marinated chicken, veggies and skewer.
Alternately skew each ingredients on the bamboo sticks and lock it with a grape tomatoes at the tip.
